If you’ve ever lived in Charleston through the summer, then you’re no stranger to the almost daily pop up rain storms that end as quickly as they started.  The mild (sometimes major) flooding and accumulation that follows are known as gully washers.  

As a classic wheat beer, the majority of grain in this beer is wheat. This soft and doughy malt adds a bready flavor to the beer.  We also use a small amount of oats to coarsen the texture of the beer and add a rustic edge to the wheat.  At the end of the boil we dose the kettle with sweet orange and lemon peels, dried chamomile flowers, and coriander seeds grown in India.  Unlike most wit beers, this beer is made with our house Belgian (Trappist-style) yeast, which adds a fruitiness and accentuates the spices we add to the beer.  It was one of the three beers we opened the door with in 2017 and we have brewed it ever since.  

This beer pairs well with grilled and raw seafood:  Sushi, ceviches, oysters.  Also great for dishes that use fresh citrus zest or juice (dressings or marinades) and spicy grilled fish or chicken dishes.
